The NAU is a Japanese-style cleaver with a strong, long blade traditionally used for cleaning and filleting fish. Its weight and length make it equally capable for deboning poultry, cutting meat, and handling hard vegetables and tubers.

The NAU's cutting technique is distinctive — the blade is placed on the material and pressed through using the heel of the hand, rather than chopped like a hatchet. The blade tapers toward the tip, allowing for fine, precise work despite its robust character. Do not use on frozen items.

A Handle with a Story

The three-part handle is crafted from ironwood, padauk and jackfruit — three distinct woods that give each knife its own unique character. No two are alike. This is craftsmanship, not mass production.

Materials & Quality

The high carbon steel blade delivers exceptional sharpness and can be easily resharpened. Please note that this is a non-rust-proof material — clean and dry after each use. Not suitable for dishwashers.

Handmade in small family workshops in Vietnam. The knives may have small blemishes that reflect their handmade individuality. These knives are not decorative items.
