The RAU is a classic boning knife — a precision tool used across Asia specifically for cutting and deboning poultry. Its stiff, hard blade with a triangular tip and raised edge on both sides lets you get cleanly under skin and tendons with ease, releasing meat precisely and without effort.
The fairly straight, 15 cm blade allows for fatigue-free work and makes the knife surprisingly nimble. It navigates around bones effortlessly — though chopping through hard bones should be avoided. Beyond its boning credentials, the RAU also excels at filleting fish, slicing meat, and handling everyday kitchen tasks like cutting bread and vegetables.
A Handle with a Story
The three-part handle is crafted from ironwood, padauk and jackfruit — three distinct woods that give each knife its own unique character. No two are alike. This is craftsmanship, not mass production.
