The MANG carries the blade shape of a Japanese sashimi classic — and its striking, unusual appearance for the European market is precisely what makes it so compelling. At nearly 36 cm total length with a 21.5 cm blade, it commands attention the moment it enters the room.
Inspired by the Japanese sashimi tradition, the MANG excels at filleting raw fish with precision and control. With a slow, pulling cut, it delivers wafer-thin slices — from fish, ham, or roast — without chipping or tearing. Many customers discover it as much as a meat slicing knife as a fish knife. Due to its extreme sharpness, this knife is not recommended for households with children.
A Handle with a Story
The three-part handle is crafted from ironwood, padauk and jackfruit — three distinct woods that give each knife its own unique character. No two are alike. This is craftsmanship, not mass production.
Materials & Quality
The blade is made from recycled leaf spring steel — a carbon steel prized for its exceptional hardness and sharpenability. Please note that this is a non-rust-proof material — clean and dry after each use. Not suitable for dishwashers.
Handmade in small family workshops in Vietnam. The knives may have small blemishes that reflect their handmade individuality. These knives are not decorative items.
