These are noodles for the sauce, not noodles that taste of sweet potato. FISH WELL sweet potato vermicelli are glass noodles made with sweet potato starch and water, with a neutral flavour and a springy, lightly chewy texture. They turn translucent when cooked and take on the flavours of the broth or dressing around them.

For soup, stir-fries and cold salads

Add the prepared noodles to a savoury soup, toss with stir-fried vegetables and tofu or meat, or serve in a cold noodle salad. Soy sauce, sesame oil, garlic and chilli make good partners, while crisp vegetables provide a contrast to the elastic strands.

How to prepare
Soak in cold water for 3 hours. Once softened, boil for 5–10 minutes. Use in soups, salads or stir-fried dishes with meat or vegetables.
